Say cheese! New fromage shop L’Atelier Fromager opens in Waco, Texas

WACO, Texas (KWTX) - Instead of a Clean Plate award winner, this week we’re taking a peek inside a new Waco shop that may push your charcutier boards to the next level.
Say cheese!
Talk about making the most out of a challenging situation.
Kirsten Schubel came to Texas ten years ago from France as a doctor.
Life happened.
She got married and had children.
Then the pandemic hit.
Stuck in American, missing home, she decided to create a familiar taste.
“I need to bring France to me. And so, I started to make cheese at home in my kitchen and then share with friends, and see their smiles was awesome,” she said.
Schubel spoke about the rave reviews she got.
So, she started selling here cheeses at the farmer’s market.
Now, she has opened her store L’Atelier Fromager, The Cheese Workshop.
It’s located at 1230 N Valley Mills Drive in the shopping center across from the Aldi grocery store.
There, you will find a variety of cheeses, hard and soft, made from cows’ milk.
Schubel described what she wants in the future of her shop.
There is a glass window that shows the back of the store where the cheese is made.
She hopes one day to have a team back there, making cheeses while the public watches.
She also wants to, perhaps, add some made from goats or sheep.
Her favorite is Tomme De Waco.
It’s a hard, aged cheese, made from the same model as one from the French Alps.
You can eat the cheese alone, or with her growing list of pairings like mustard, honey, even sardines.
“My goal is just to show people that you can enjoy food and that’s a way of connection.
When I was a doctor, I would take care of people dying a lot. And so many of them had regrets of things they didn’t do."
“That is what I want to do, is see people smile. Enjoy that moment just through something I make.”

And here’s a quick look at this week’s Restaurant Report card.
According to the food safety inspector’s reports, these are some of the more concerning violations.
Taqueria El Mexicano Grill at 4019 North 19th Street in Waco failed a routine inspection with a 69. (31 demerits)
Some food wasn’t kept at the right temperature, including the raw pork belly, and there was a live roach in the dish washing machine area.
News 10 spoke with a manager at the business who said pest control would arrive at the location soon and the other violations were corrected.
Brown House Cafe at 9110 Jordan Lane in Woodway failed a routine inspection with a 77. (23 demerits)
Aside from the sliced dairy, coleslaw, chicken salad, sour cream, and cooked meats not kept at the right temp, there was a black, mold-like substance on the ice machine.
KWTX also spoke with the owner of the business, who explained it’s in the process of training new team members to address these concerns.
Hat Creek Burger Co. at 103 Archway Drive in Waco failed a routine inspection with an 88. (12 demerits)
Here, food not kept at the right temperature was thrown out.
Anything from the raw and grilled, diced chicken to some vegetables, Hat, Happy, and homemade ranch sauces were tossed out.
