Mexi-Cajun seafood restaurant opening at old Twin Peaks location in Waco, Texas
Former George’s manager, Chris Cady, is renovating the old Twin Peaks building in the Central Texas marketplace in Waco.
WACO, Texas (KWTX) - A new restaurant is coming to town in one of the most unlikely places, and it has people curious about what it will serve and who’s opening it.
KWTX has learned former George’s manager, Chris Cady, is renovating the old Twin Peaks building in the Central Texas marketplace in Waco.
The new restaurant, Tia Juanita’s Fish Camp, is a Mexi-Cajun seafood fusion spot with an oyster bar.
Once work on the building is complete, Cady said, it will be brightly colored, showing off its eclectic Texas, Louisiana, and Mexico decor.
It’s a sight you won’t miss and one that plans to keep you fully engaged from the endless stuff on the walls to the “something for everyone” list of items on the menu.
Still, nothing distracts from the previous business in this building.
This location was the site of the infamous Twin Peaks biker brawl that happened about 10-years ago, on May 17th.

Nine people were killed, 18 injured, and 177 arrested.
Since that time, other restaurants have tried and failed here.
First, there was Scotty’s Brewhouse, which opened in 2017, only to close a year later.
Then most recently, the Austin-based Louisiana Crab Shack in 2019.
It closed in 2021.
Patrons of the shopping district have said over the year, the bloody brawl had stained the location, making it hard for another food business to have longevity.
Cady, however, said he has the secret ingredient to make his new eatery not only survive but thrive.
“I’ve always thought the location is amazing. Obviously, I know the history. I was here. But it’s in probably the best place in Waco. You can’t miss it. Every one of us probably passes by it every day or most of us do and we all shop at the Central Texas Marketplace.”
He went on to say with excitement, “I think Waco, it’s very easy to success and it’s very easy to fail, and the one factor that matters is service and giving the guests what they deserve.”
